Tempura Fish Cocktails with Mushroom Omelette
INGREDIENTS:
- 4 pieces Pacific West Tempura Fish Cocktails
- 25g/1oz Butter
- 150g mixed Local Mushrooms
- 3 Eggs (beaten)
- Salt and freshly ground Black Pepper
For the Top
- 3 tbsp Butter
- 100g mixed Local Mushrooms
For Garnish
- 3 tbsp Butter
- 100g mixed Local Mushrooms
INSTRUCTIONS
Melt the butter in a pan and add the mushrooms. Cook for three minutes until soft. Add the eggs and season. Cook on a low heat for 4-5 minutes until the egg is cooked.
Turn out onto a plate upside down.
From frozen, deep fry 4 pieces Pacific West Tempura fish cocktails until golden brown.
Serve on top of the omelette.
Mix all the garnish ingredients together and serve on the side.
