Tempura Fish Cocktails with Mushroom Omelette

INGREDIENTS:

  • 4 pieces Pacific West Tempura Fish Cocktails
  • 25g/1oz Butter
  • 150g mixed Local Mushrooms
  • 3 Eggs (beaten)
  • Salt and freshly ground Black Pepper
For the Top
  • 3 tbsp Butter
  • 100g mixed Local Mushrooms
For Garnish
  • 3 tbsp Butter
  • 100g mixed Local Mushrooms

INSTRUCTIONS

Melt the butter in a pan and add the mushrooms. Cook for three minutes until soft. Add the eggs and season. Cook on a low heat for 4-5 minutes until the egg is cooked.

Turn out onto a plate upside down.

From frozen, deep fry 4 pieces Pacific West Tempura fish cocktails until golden brown.

Serve on top of the omelette.

Mix all the garnish ingredients together and serve on the side.
