Pan Fried Barramundi Turmeric Vegetables
Barramundi Portion Cut 120-150gr
INGREDIENTS (2Pax):
- 2 pcs Portion Barramundi Portion Cut
- 2 small White Cucumber
- 1 large Carrot
- 1 Eggplant
- 1 piece of Fried Tofu
- 50gr of Green Beans
- 2 Red Chilis
- 2 Bird eyes Chili
- 3 Curry leaf
- 2 Lime Leaf
- 1 stick of Lemon Grass
- 1cm piece of Laos
- 1lt of Water
- 1 Tsp of white vinegar
- 1Tsp of white sugar
FOR SPICE PASTE:
- 1 clove of Garlic
- 3 peeled red shallots
- 3 pieces of Kemiri
- 2 cm piece of fresh turmeric
- 1 Tsp of Salt
- 2 Tbs of oil
- Salt & Pepper for seasoning
INSTRUCTIONS
- Remove seeds of cucumber and cut in sticks, peel the carrot and cut in sticks, cut Green beans in 2 cm sticks, all vegetables should be cut the same size except the Eggplant and Tofu that are cut in cubes.
- In pestle or blender mix all the Bumbu ingredients.
- In a sauce pan place half the oil and stir fry the Spice Paste gently, after 5 minutes, add the Curry Leaves, lime Leaves, Crushed Lemon Grass and Lao and cook again 5 minutes gently with all ingredients.
- Add all the vegetables and mix well.
- Add the cut Chilis and mix again.
- Add the water, Vinegar and sugar.
