Baked Barramundi Miso, served with Greens
Individual Portion Cut Barramundi 120-150gr
INGREDIENTS (2pax):
- 2 Portion Cut pieces of Barramundi
- 1Tbs of Light Miso
- 1tsp of Brown Sugar
- 1Tbs of Mirin
- ½ Tsp of Sake (Optional)
- 150gr of Broccolini
- 4 cherry Tomatoes
- 25gr Butter unsalted
- Salt & Pepper for seasoning
- Basil for decoration or your choice
INSTRUCTIONS
- Wash your broccolini and boil them for 30 seconds in salted water, remove from water and chill them in an Ice bath. Once cold, drain and set aside in a plate with the raw cherry tomatoes.
- In a bowl place the Miso, Mirin, Brown sugar and 2 Tbs of water, and the Barramundi portions, rub gently the fish so that it is fully covered with the mix. Place in sealed container for an hour, but nicer if you let marinate one night.
- Take Barramundi portions out of the marinade, place the fish on a baking tray and in oven at 180 degrees for about 12 minutes. Fish should be just cooked, set aside to rest for 5 minutes while you are preparing the vegetables.
- In a Teflon pan, place the butter and melt it gently, add your Cherry tomatoes and Broccolini. Season with salt & Pepper and pan fry until butter is nice and golden brown.
- Remove and plate your dish, Fish and broccolini with some cherry tomatoes for decoration, basil leaf and for final touch sprinkle some freshly ground Black Pepper
